According to the Centers for Disease Control and Prevention, 48 million people get sick, 128,000 are hospitalized, and 3,000 die every year from foodborne illness. Some of the culprits are disease-causing microbes or pathogens, such as the norovirus, Listeria, Salmonella, and E. coli. Poisonous chemicals and other substances are also guilty of causing foodborne diseases—of which there are more than 250.

In light of the arrival of summer, it's time to talk about food safety and the ways in which it relates to the preparation of meat products. Warmer temperatures go hand in hand with vacations, barbecues, and countless events where food is cooked on the grill. Even when stringent precautions are taken in the handling and preparation of meat, the threat of bacterial pathogens such as Salmonella and E. coli in our foods is both very real and very dangerous.

Established restaurants and breweries take food safety very seriously. But hobbyist home brewers and new micro brewers may not have access to the food safety testing information they need to ensure they’re brewing clean beer.

As we approach the annual IAFP meeting in August, food safety testing is on all of our minds. Food safety best practices dictate that all food production and service companies should establish and abide by a comprehensive environmental sampling program that includes regular swabbing for pathogens.
